A vibrant and refreshing dessert, this lime and yogurt bundt cake offers a delightful citrus flavor with a tender crumb, thanks to the combination of butter, yogurt, and lime. The cake is highlighted by a fresh lime syrup that provides a bright finish, while a homemade cake-release mixture ensures it easily slips from the tin. This cake serves as a perfect treat for those who appreciate a balance of zest and sweetness.

To begin, prepare the cake-release mixture by blending equal parts plain flour, vegetable oil, and softened unsalted butter into a smooth paste. Use a pastry brush to thoroughly coat the bundt tin, focusing on all grooves and edges, and set it aside. The batter is made by zesting six juicy limes and combining the zest with caster sugar, releasing the lime oils through a gentle rub. Then, mix this with softened butter using a stand mixer until the mixture is pale and fluffy.

Continuing with the batter, warm five eggs in their shells in hot tap water, crack them open, and lightly whisk before measuring 250 grams to add to the butter mixture in three parts. After mixing, incorporate the dry ingredients of soft plain flour, baking powder, and fine sea salt into the wet mixture by folding them in with plain yogurt. Ensure no streaks remain before transferring the batter into the prepared bundt tin, smoothing the surface, and baking at 170C/150C fan for 60–70 minutes until golden brown.

While the cake bakes, prepare the lime syrup by whisking icing sugar with fresh lime juice until smooth. Once the cake is out of the oven, make small holes across its surface with a metal skewer. Pour about half of the syrup over the warm cake, focusing on the cracked top, and let it soak for 10 minutes before inverting it onto a serving plate. Further enhance its flavor by brushing additional syrup on top and allowing it to cool for 30 minutes before slicing. For those who enjoy a more intensely soaked cake, add another layer of syrup.

This bundt cake can be stored at room temperature, covered, for up to three days or frozen for up to three months, making it a versatile dessert option. Its combination of citrus and sweet flavors, along with its moist texture, promises a delightful experience for cake enthusiasts.
